The Woolshed Restaurant, Rawnsley Park, Flinders Ranges: In the Outback region of South Australia

Rawnsley Park Station has been a working sheep station for nearly a century. But since the 1960s it's also been rounding up its fair share of tourists.

Shearing time becomes part of the lunchtime show at the Woolshed Restaurant when diners work up an appetite watching others work. And according to chef, Ron Heinrich, for some city dwellers, this is the closest they'll get to what's been a fundamental part of life in the Aussie bush.

After the work is done, it's only a short walk across the woolshed to the restaurant. On the walls patrons can take a quick tour in hessian of sheep stations scattered throughout the Flinders.

Many would have had a pepper tree for shade around the homestead. Ron's plum sauce makes the most of what the early pastoralists introduced to the outback with the peppercorns offering a bit of spice to his seared kangaroo.

"The peppercorns gives the 'bushie' sort of flavour to complement the kangaroo. I tell people that I have a spicy plum sauce and the secret ingredient is the peppers."

With views to Rawnsley's Bluff and the sheep dogs going through their paces below, the balcony is the ideal place to enjoy some classic bush tucker at the Woolshed Restaurant.
